This is Messermeister's first-rate San Moritz steak knife. Forged from a single piece of high-carbon stainless steel, the knife's 4-1/2-inch blade has a shortened bolster so it's sharp from tip to heel. The 9-inch table knife is specially designed to slice a thick steak, pork chop, or beef roast into bite-size pieces. Though its blade is serrated on the upper half and tends to tear meat fibers rather than slice precisely through them the way a straight-edge knife does, fine serrations reduce the tearing effect, and the blade's lower half is straight. Molded from a polymer that won't crack or warp, the handle is tough and contains a nearly full tang. To keep the blade sharp, it's best to hand wash this knife in soapy water. --Fred Brack
